Variation in Total Carotenoid Content of Gari from Yellow Root Cassava (Manihot Esculenta Crantz) Varieties During Prolonged Storage

Agronomic characteristics of some novel yellow root cassava varieties (YRCVs) released in Nigeria 2011 and 2014 were investigated during their development but there is paucity information on the stability total carotenoid content (TCC) products storage, hence this study. Gari from three YRCVs (TMSI011368, TMSI010593 TMSI010539) a white variety (TMS30572) as control stored under daylight dark conditions for 1 year. The samples scored colour scale (white) to 8 (pink) analysed TCC following standard procedures at 0, 3, 6, 9 12 months after storage (MAS). Data subjected analysis variance α0.05 correlation was done between gari TCC. Variety, season duration effects significant had no bio-fortified reduced 7.49 µg/ g (TMSI011368) 15.19 (TMSI010593) initial stage 1.65 (TMSI010539, condition) 2.09 (TMSI010593, 3 MAS. Over period, TMSI011368 least (7%) highest (18%) percentage retention, respectively. Notably, positively correlated each condition.
